k so i like eating eggs. but only scrambled or in an omellete. cooked eggs are sucky.
so like how do you guys prefer your omelletes?
when i make batter i normally use about 4 eggs and 100ml of milk (this makes it nice and fluffy) also add a pinch of salt otherwise it's yucky and tasteless
the best way to put toppings on is while the one side is cooking (never flip it over to cook it both sides. it isn't a pancake). put your toppings on (cheese, chilli, salami, bacon, chaurico, or whatever you have in the cupboard. only savoury things though).
now while it is still hot, and cooking in the pan (only the one side, remember) you put the toppings on. then before you slide it onto a plate you fold it over (like a calzone)

I always forget how much milk to put in for omelettes and scrambled eggs, so the easiest way is to fill the one half of an eggshell for every egg you put in. Quite handy!

I always find it helps to separate your whites and yolks. Add some milk to the yolks, stir and set aside. Whip the whites with a little bit of salt until fluffy. Fold this into the yolks then pour into a pan. Add toppings, etc. then leave it alone for a bit, just enough so the egg begins to set. Keep checking to see if it's browning underneath. The minute it gets a nice golden colour, flip half over and serve. Mmmmm. :b...

I always add a little bit of baking powder to the mixture. just a smidgen, mind you, otherwise it will tast soapy. The baking powder helps to make it more fluffy.
Only problem with this technique is it becomes too light to flip over easily without breaking, unless you really know your stuff. A non-stick pan with gently sloping sides is essential. I usually just cover it with a lid and let if cook through, by the time it's done on top, the bottom will be nice and brown (don't give it too much heat, though), then you can just slide it onto a plate, put the filling on one half, and fold it over.

The last hotel I stayed in put me off omelettes. Ordinarily though, heaps of green pepper, and a mix of Gruyere and mature Cheddar.

I found it easier to make an omelettes in the microwave oven. All you need is a flat plate, a bowl, 2 eggs, baking powder, salt and your filling of your choice.
Beak the eggs in a bowl and mix with a little baking powder and salt, put this mixture on the plate. Put this mixture in the microwave oven for 1 minute, take out and add your fillings. Put it back into the oven for about 1 minute, and there your are. No need to change the plate.

now if u want to make ur omelette more fluffy and nice, add cream instead of milk - but only about 50 - 100ml's. that's enough to make the mixture bind and doesn't make it too heavy either - it's also about the same richness as full cream milk without the soggyness

umm... omelettes, yes... chicken mayo omelettes are the best!... just chicken strips and mayo with a little salt and lemon pepper... add that with some sweet pepper strips and you're laughing mate...
