These cookies rock, plus they're cheap and easy to make. If you're on a budget and so poor you're about to eat cat food, make a ton of these
Ingredients:
2 1/2 cups sifted flour (self-raising)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup butter or margarine
1 cup white sugar (plus a bit extra)
1 cup brown sugar
2 eggs (lightly beaten)
1 cup peanut butter
1 teaspoon vanilla essence
Instructions:
Preheat oven to 180.
Sift flour once, measure and resift with baking soda, and salt.
Cream butter and sugars until light and fluffy.
Add beaten egg, peanut butter and vanilla; beat well.
Gradually add dry ingredients and blend well.
Form into teaspoon-sized balls and lightly roll in extra sugar.
Drop onto ungreased cookie sheet about one inch apart and press in a cross pattern with the tines of a fork.
Slap 'em in the oven and bake for about 10 minutes or until done.
Makes about 5 dozen! Woohoo!
